xp_sendmail has blank message with Outlook 2000 / Exchange Server 2010

We are in the process of migrating from Exchange Server 2003 to
Exchange Server 2010. Most of our mailboxes have been migrated but we
have several SQL Server 2000 servers that send email using Outlook
2000 whose mailboxes have not moved. When we migrated one of these
SQL Server 2000 server's mailboxes to Exchange Server 2010 the emails
created by XP_SENDMAIL immediately started having blank messages.
Has anyone encountered this issue? Is there anything that can be done
on either Exchange Server or on the SQL Server side that can correct
this issue?
