Defaultl SMTP Virtual Server, "all unassigned", beginner questions

On the "General" tab of the "Default SMTP Virtual Server" Properties
There is an "IP address" drop-down box. I'm given two options:

"all unassigned" and
xxx.xxx.xxx.xxx (my server IP address)

What is an "unassigned" IP address? What is an "assigned" IP address?

When we were using the UCE filter, we had UCE filtering turned on for "all
unassigned", and it was working. Does this make sense? (Or has there been
some other change)

Mail actually comes from, and goes to, another SMTP server (not Exchange) on
a different box, which is set up as a 'smart server'. Is this an
'unassigned' IP address? Was the UCE filtering affecting traffic through
that? How would that work?

There is no filtering defined on xxx.xxx.xxx.xxx (my server IP address)

Insight would be welcome :~)

An unassigned IP address is basically any IP address on the server. So if
you had a server that was dual homed to say a regular network and a backup
network, you'd want to specify the regular network IP address to the SMTP
VS - if you left "All Unassigned", port 25 would listen on both IP
addresses.

O, right, I misunderstood that -- only the selected option is
attached to that virtual server, and only after it has been 'applied'.

I'm daily working with an engineering product where you have
to set all the options for each of the values in the drop down
list on the tab -- I've become so used to that it's become
'intuitive' to me.
