Is there a straightforward way to get average messages per user
mailbox and average message size across an entire Exchange 2007 org?

No straightforward way to get the average sizes. You'll have to run
the Exchange profile analyzer or if you have something like
Messagestats.

This one is for Exchange 2010, I'm not sure if it works on Exchange 2007.
