Are these the steps I would take? :
1. Install new Exchange 2007 Server.
2. Move all user mailboxes to the new Exchange 2007 Server.
3. Create replicas of all public folders.
4. Follow the instructions in http://support.microsoft.com/kb/307917

There is a lot more planning that simply putting a new box in and
taking the old box out. Sure, at the basic level the steps there would
get to where you need to be.

I also read sections of Microsoft Exchange 2007 Unleashed (Sams Publishing)
and Exchange Server 2007 Administrators Pocket Consultant (MS PRess).
The later has become my new best friend
We had quite a lot of public folders so I used Quest Software Publiic Folder
Migratior to move eveything to Sharepoint Services.
All in all I spent about a month planning the upgrade and then did the
upgrade over several weekends (we also went to outlook 2007/office 2007/
windows 2003 server upgrades on all servers in domain in the same upgrade).
Weekend 1: Step one: Upgraded all servers to Windows 2003 RC2 SP1 except for
Exisiting exchange 2000 sp3 server which was left on windows 2000 sp4.
Upgraded domain / forest / AD to windows 2003 mixed
Weekend 2: Step 2: Upgraded all office from office xp to Office 2007
Weekend 3: Step 3: Added new Exchange 2007 to forest and moved mailboxes
Weekend 4: Step 4: Migrated public folders to Sharepoint Services
Weekend 5 (this weekend actiually) Step 5: Removed exchange 2000 from forest.
Apart from some initial installation issues with the Forest Prep stage and
now some OAB synchronization errors the upgrade went pretty good compared to
some upgrades in the past.
