Simple questions, but I cannot seem to find it in system manager.
would it be smtp.server.domain.com or just smtp.domain.com?

Its the FQDN of the server as defined in DNS.
Is this an externally-hosted webserver? If so, why does it need to relay
mail through your SMTP server? Can it not use a server on the hosting
company's network?
If it's an internal webserver, use myserver.myinternaldomain.com - and make
sure its IP is allowed to relay (properties of VSMTP server in Exchange
System Manager).
