The following available course and clinics should help.
Course 10135A: Configuring, Managing and Troubleshooting Microsoft Exchange
Server 2010 (5 day)
http://www.microsoft.com/learning/en/us/Course.aspx?ID=10135A&Locale=en-us
Collection 6899: Exploring Features of Exchange Server 2010
https://www.microsoftelearning.com/eLearning/offerDetail.aspx?offerPriceId=249671
Please keep in mind that there is no direct "upgrade" path from Exchange
2003 to 2007 or 2010. It's basically a migration. The course doesn't
necessarily require familiarity with previous versions of Exchange, however
they require you to know AD inside and out as well as scripting using
PowerShell. The 10135 course does cover transitioning an Exchange Server
2003 or 2007 organization to Exchange Server 2010.
Good luck!
