Does anyone know of a way to recover deleted mailboxes from a Exchange
Server?

Assuming ur on exchnage 2003, find the below steps to recover deleted
mailboxes.

To Recover a Deleted Mailbox to the existing user
1.Open the Exchange System Manager, locate the mailbox store that contains
the Deleted mailbox.
2.Click the Mailboxes object under the mailbox store.
3.If the mailbox is not already marked as disconnected (the mailbox icon
appears with a red X), right-click the Mailboxes object, and then click
Cleanup Agent.
4.Right-click the disconnected mailbox, click Reconnect, and then select the
appropriate user from the dialog box that appears.
5.Click OK.

To Reconnect a Deleted Mailbox to a New User Object
1.In Active Directory Users and Computers, create a new user object. When
you create the new user object, click to clear the Create an Exchange Mailbox
check box.

You will connect this user account to an already existing mailbox.
2.Follow steps 1 through 4 in the preceding "To Reconnect (or Recover) a
Deleted Mailbox" section.

You cant withhout building a new server and restoring the Info Store
to it.
Its actually quite easy.
Add a server to the production network. ( Not the same name as the
current 5.5 server of course)
Install Exchange 5.5, create a new org.
Bring it to the same service pack and hotfix level as the production.
Restore from backup the Info Store ONLY ot the new 5.5 server, not the
DS.
Run the IS/DS consistency adjuster after the online backup is
restored.
Then associate the mailbox you want to access with a account and open
it to recover the contents.
(or exmerge)

Time to upgrade!
