I have a workbook with lots of validation drop-downs, it works fine
for me and some of my colleagues, but some others cannot see the
arrows?

Which version of Excel you are using?
Can you try select one of the cells that should have the list. Then
press Alt-down arrow and see if the list shows up. If so, the
validation is there.
Can you also have a look at Tools>Options, View tab, and if under
'Objects' selected is 'Hide All', the Data Validation arrows won't be
displayed.

If so, try this to re-instate them
Close the workbook (save if necessary).
Then goto File>Open and navigate the file browser to that file (don't select
it from the recent files).
Select the file from the available spreadsheets, don't click Open, but click
the drop-down arrow next to Open and select the Open and Repair option.
This will open it and repair it, fixing the lost validation. You will need
to do a 'SaveAs' on the file, over the top of the previous file if you want,
the repaired file is treated as a new file.
