I have a problem with people thinking they are copying cells in a column
when they are really incrementing the value of the first cell (and not paying
attention). Is there a way to protect the column and allow them to copy but
not change the cells?

If you allow users to input their own data in a cell, the formula will be wiped
anyway.

Lock those cells then protect the worksheet and you cannot edit those locked
cells in any manner.
