I try setting the cell properties in Excel so that the lines are turned off
in Excel before I copy, but that doesn't help. I try to turn off the lines
in Word too, but Word sees the Excel stuff as an object, not a table, and it
won't let me set individual borders as with a table.

Try turning off the gridlines in Excel under Tools/Options/View
instead.
Also if you're concerned that the gridlines will print, the embedded
Excel worksheet will follow the print options as specified in Excel
under File/Page Setup. So if you do not have Gridlines selected on the
Sheet tab then when you print the Word document they will not print.
Note that they will still display in Print Preview, however they will
not appear when the document is actually printed.
As another suggestion, if you do not need to edit the Excel worksheet
then you can also copy it as a picture instead. For this, in Excel
select your cells, hold <Shift>, click the Edit menu and select Copy
Picture. You would want the option "As shown when printed".
