You're stuck with the number of colors in Excel's palette. You can adjust
these to your heart's content, but you only get a total of 56. I'm not sure
most people could make sense out of a chart with this many colors, though.

I believe you have to change the palette, then the defined colours will
be available when you format a column.
To change the palette go to menu Tools > Options and then the Color tab.
