To set up OLE for Point of Sale (OPOS) drivers for an Epson printer in Store Operations, follow these steps:
Before you can download the Epson OPOS drivers, Epson requires that you register with their "EpsonExpert Strategic Developer" Program. This is a free program that is designed exclusively for North American users. This program gives you a single source of information about Epson OPOS products and services.
During the installation, accept all the defaults except when you are prompted to choose Epson CO or Common Control Object (CCO). In this case, choose Common Control Object (CCO).
Note If you accept all the defaults, make sure that you remove the OPOS drivers, and then reinstall them. This action is required by Store Operations, not by the Epson drivers. For information about how to remove Windows applications, search Windows Online Help.
Click Check Health Interactive. You will receive a test receipt if the printer drivers are configured correctly. The printer drivers must pass this test successfully to work in Store Operations. Click Finish to complete the OPOS installation for the printer.

Note There are some cases in which a printer and cash drawer test successfully in the Epson Setup program but do not work in Store Operations. In these cases, use the Windows Add/Remove application in Control Panel to remove the 2.50e drivers, and then download and install an earlier version of the Epson OPOS drivers. I have noticed some differences in macOS Monterey for adding printers. When you select ADD in System Preferences, it doesn't show Airprint any longer. The printer name pops up and that is essentially the simpler Mac supplied driver. You have to select Other Software and then a pop up box will show the installed Epson drivers. Never explained anywhere.
Thanks - now after some hours of try and error all becomes more "mytirious". I can install the driver downloaded from Epson for 3880 but the printer is not present. There are only printer like 3895ans other ... But with Epson Printer Lout you can print - but not with Photoshop (tested with 23.5 and 23.4.2). So it can be also a bug in PS or by Epson . A Laserprinter works fine.
I just installed an Epson xp211 using the cups web interface, selecting the XP-211-214-216-Series own cups driver, but this one doesn't have the ability to select the resolution and the ink mode of 4 colors/ 3 color composite.

I realise that this is nothing more than a mild annoyance, but I'm just wondering why this would be - is it a bug in macOS, or with the Epson software/driver itself? I note that the icon for my now defunct Artisan printer is showing up as expected, as well as work's printer.
I recently replaced an aging Epson with a newer Epson and it displays and works fine. Your annoyance may be a bug from the driver or Apple's fault, but Apple will get the image from Epson, so my thought looks in their direction.
