Please pay particular attention to the description of "emulsification"
of triacylglycerols; i.e. large, lipid soluble (or water insoluble
triacylglycerol molecules) are dispersed by amphipathic phospholipids
(lecithin) and bile salts into smaller micelles which have an external
hydrophilic portion to interface with pancreatic lipase (a water
soluble enzyme).
