I cloned the qgroundcontrol repository and did the submodule update as described and then did git checkout v4.1.6.
When I tried to build it I got an error saying MAV_TYPE_VTOL_QUADROTOR isn't defined.

G'day! You should raise this kind of question on the QGC channels.
The cause is that this enum value was renamed in MAVLink to MAV_TYPE_VTOL_TAILSITTER_QUADROTOR . You will need to grep the source and do a direct replacement wherever that happens.
