I've got an old Roland SH 201 keyboard that want to hook up again, so ive got a usb2.0 to midi cable, Logic recognizes with a pop up when usb is plugged in, it also appears in the Audio Midi Setup utility app and the device is "online" but when pressing any keys or turning knobs on the keyboard Logic doesnt receive anything!

A USB to MIDI cable is really a USB-MIDI interface that is very tiny and built into the cable somehow. Many of those are unreliable and there are too many examples of Logic users reporting issues with them to list here.
