Hi,
The £ symbol seems to be missing from the MathJax font, and the
\pounds and \sterling commands are not defined. \unicode{163} gets a
missing character symbol. Is there any way of getting a pound symbol
inside maths?

The pound sign is in the italic font, so try \it\unicode{xA3} instead. You can define \pounds or \sterling to produce this by adding
pounds: '{\\it\\unicode{xA3}}'
to the Macros object in the TeX section of your configuration.
