Does anyone know how to set the localization for assistive-mml or achieve localization in a different way for accessibility features?

The assistive-mml is not something that MathJax localizes (just as it doesn't localize the visual output).  But if you activate the accessibility extension using the MathJax contextual menu (or in the page's configuration) and turn off the assistive-mml, you will get MathJax's speech text (rather than the screen reader's MathML processing), and that can be localized.  Use the Accessibility -> Speech -> Language submenu to select the localization to use for the speech production.

I hope that helps.

I don't know the use case that you are trying to solve, but if you are interested in multi-language support in screen readers (either speech and braille), I invite you to help add support in MathCAT for any language not currently supported or in development. MathCAT will soon be the default math support in both JAWS and NVDA. It is also used in many other projects and works for web pages, word documents, and soon (NVDA 2025.1) tagged PDF documents such as those that are now generated from pdftex (when the LaTeX includes the appropriate preamble). If screen reader support is something that solves the problems you are facing, please file a MathCAT issue and I'll get you started on doing a translation.
