Missing doc for UI changes (v2024 to v2025)

Hi everyone,

I recently discovered this PR while troubleshooting plugin display issues. I noticed these changes are missing from both the release notes and the migration guide.

It would be beneficial to explicitly mention the UI overhaul—specifically the removal of hardcoded colors and the migration to the new flexBox component. This is particularly relevant for the mapstore2-georchestra project.

Without this context, the visual difference between v2024 and v2025 looks like a regression or a styling bug rather than an intentional update.
