Long time no hear :) Basically you have two options.
1- Get a copy of vertical mapper or encom discover that allows you to do
some real neat grid analysis or
2- Use grid maker as part of the standard MapInfo tools set and create a
grid, update the grid cells with either the count of points or sum etc and
then do a theme by grid on the results.
Basically you are wanting to interpolate instead of having a distinct
boundary between the values. Use create thematic map and choose grid
instead of individual, range or other.
