It was the beginning of my Junior year when I was debating what to change my major to. I was hopeful that this choice would make it possible to finish my education on time. I enjoyed working with children since my freshman year of high school.

My first time working with kids was as Sunday school teacher which I continued to participate all four years of high school. When the opportunity arose to attend a four year college I immediately enrolled as an education major. While, in college I worked with children in College Mentors For Kids for four years and for one year at a local church helping with Awana.

After completing a handful of education courses and general education courses, I started to take the tests required of education majors. I was close to passing my first time; however, I still was going to have to retake it. Encouraged with how close I was the first time I followed through and took the test again. However, prior to my taking it the second time some requirements to pass the examination had changed. The change in requirements seemed to be a an impossible obstacle in and of itself.

I soon realized that the impossible obstacles were not over. When I went to begin scheduling classes for my upcoming year many education courses were unavailable to people who had not passed the testing yet. It was making it near impossible to have enough courses to be considered a full time student. I was able to obtain enough credits, but still had many questions about what would continue to happen to my college education if I was unable to pass the test.

The lack of clarity as to what would occur if I continued to have obstacles in completing this examination were annoying to say the least. The summer prior to my senior year, I worked at a Bible Camp. I continued to ask questions in person and via emails. Finally, I had told the education leader that I wanted to look into other majors. Since, I worked with children in a variety of settings I would appreciate if she would suggest other majors in which I would still be able to do that. She told me Youth Ministry and Counseling.

To Make a long story short I chose counseling. I still graduated in four years with a Bachelor of Science degree in Counseling. After graduating, I became a wife and started to work as an aid in an after school program. I began corresponding with a lady about a daycare that will be open near where I am currently living.

I began to fill out paperwork and before I knew it I was being told a lot of information pertaining to the center. I soon was told that all the paperwork was being placed in a file, so all my information would be together as licensing began with me being considered one of their teachers. Still not certain that this meant I was completely hired, I continued to look at other opportunities. A few emails more about online training and certifications concerned me that I may not pass.

I began the online training courses and and certification process. While working on these processes, I kept in contact with two women on how everything was going. At one point one of the women decided it would be a good idea to organize a picnic, so that coworkers had the opportunity to meet one another. When this happened I thought it was very likely that I had just accomplished getting a full time job. Meanwhile, I began working at my churches resale. I now know the date of the picnic. I sent out to have references written and sent over. I am looking forward to each step of this process. I believe at least two of my references are sent over and mostly everything else is sent over. I believe one more reference is on its way.

Sunday, June 28 I will be attending a company picnic. I hope all goes well. As Sunday June 28 approaches, I have been ensuring that all paperwork is getting filled out and sent over to be placed in my file. I was also able to stop in the center. The structure of the center is complete and the inside is still requiring slights amount of work. During my visit, I killed two birds with one stone (not literally). I was able to get my official transcripts placed in my file as well as meet the director of the center.

Still with June 28 approaching, There is much else going on in my life (our life) My husband and I are hoping that it will not be long until we have to sign a lease for an apartment. We are both working and hoping that careers will start taking shape. At this point it sure seems like my dream is going to come true.

June 28 came and went. The picnic was a great opportunity to meet other people who are interested in the learning center as well. Still many questions left unanswered, I know what the dress code is at this point. The plan is still opening the center some time in August. I praying that more news will becoming my way. My husband and I will be signing our first apartment lease July 18. We will be celebrating a year of marriage July 19. I am hopeful that our second year will bring much more exciting news.

The most recent news about the center as the July month ends is that the center is officially licensed. The center is just waiting on the lady from DCFS to come visit and give them the final okay and then they will be able to start training. Hoping that it will still be an August start date.

The news has been good news and I toured the center and just have to say thank you God for even allowing me to get close. I will be waiting, not certain how patiently, but waiting either way to know whether this dream will come true.

August 12 Still may be waiting for the center to open; however, while I wait achievement are occurring. I completed my First Aid CPR and AED training. I am officially certified. Hoping and praying that I will not ever have to utilize it. Thankful to have this accomplished all the same.

Good things take time and there are no shortcuts. Years ago we bought some land that bordered us. I (Amanda) was not excited about the purchase. The land was covered in mesquite and tarbush, growing zero grass and looking like nothing good could possible come from it. John knew better. Honestly, I don't know if he ever met a land parcel he didn't want to buy. Sigh.

We have a little side business that actually does land restoration, mesquite clearing, and the like so it was an easy process to get started. Fast, no, but we did know how to start. Along with the Natural Resource Conservation Service we began clearing out the mesquite and tarbush, raked it into piles and leveled the ground. This process took a year of solid work.

After the land was cleared and leveled, the next move is to work with experts and determine a seed mix of native grasses and forages. It takes lots of time and extra water but over the course of a year, the grasses slowly began to establish.

While we waited on the grass to establish we worked to building fencing and add water troughs. Just this week, we were able to turn cows into these pastures for the first time. The grass is shoulder high and thick. These young heifers will grow our herd by 80 and they are as happy as can be to be roaming around on these pastures. It's truly a dream come true.

If you are wondering if this is possible where you are, it most likely is. There is great funding assistance available to you from the NRCS and we are happy to help you to find the right people to talk to. It would be amazing to see our region back in grass and able to sustain more livestock to support our local food systems and we are here to help guide you.

Two-weight undisputed champion Katie Taylor will once again face Amanda Serrano on July 20 at AT&T Stadium in Arlington, Texas, as the co-main event of the boxing match between Mike Tyson and Jake Paul, officials told ESPN.

The card, promoted by Paul's Most Valuable Promotions (MVP), will air live on Netflix globally with no added paywall. It's the first live combat sports event distributed by the streaming service and has a chance to be one of the most watched fight cards of the modern era.

"This is the rematch the world has wanted to see, and I'm delighted that it's finally happening," Taylor said in a statement. "The first fight in New York was obviously an epic occasion and it more than lived up to the billing, and I'm sure the rematch will be no different."

Taylor vs. Serrano will be for the undisputed super lightweight championship held by Taylor. Serrano will move up three weight classes from the featherweight division, where she holds several world titles. The bout will be contested over 10 two-minute rounds.

"Katie Taylor and Amanda Serrano are two of the best boxers in the world," Tyson said in a statement. "I know they can both put on an incredible show, and I'm thrilled to have them join this card. These remarkable athletes will undoubtedly elevate the event with their global appeal and fan bases. Adding one of the greatest fights in women's boxing history to this unforgettable event is a true gift to fans."

Taylor beat Serrano by a razor-close split decision on April 30, 2022, at New York's Madison Square Garden. It was the first women's boxing match to headline MSG and more than lived up to its billing. The first bout was one of the best of the year in men's and women's boxing, and was considered historic in combat sports.

"I promised my fans they would see this rematch after we made history at MSG and it feels like a dream come true to know that Katie and I are finally making it happen on the biggest stage possible to show the world what elite women's boxing is all about," Serrano said in a statement. "I believe I won our first fight, but I didn't get the decision, so this time I'm not leaving it to the judges."

Taylor (23-1, 6 KOs) is coming off a majority decision win over Chantelle Cameron in November, winning the unified super lightweight title in the process. The 37-year-old from Ireland avenged a previous loss to Cameron in May 2023. She is a former Olympic boxing gold medalist, the undisputed lineal women's lightweight boxing champion and one of the most decorated athletes in the history of Ireland.
