Malayalees do not need introduction for Thattil Kutty Dosa. The dosa became famous with the super hit movie, Salt n' Pepper. But, only few know that the dosa originated almost three years ago in the Thrissur corporation's Kudumbasree unit, Health & Taste Restaurant, at West Fort. The dosa is a perennial favourite of Thrissurites who visit the restaurant.
The restaurant is supported by Adhebha Institute of Food Research and Hospitality Management (AIFRHM) in Thrissur. Cooking in the restaurant is done by six women who are Kudumbasree members but the recipes are given by AIFRHM CEO Ajayakumar.
The lady 'chefs' - Geetha, Sindhu, Sheri, Nirmala, Rajani and Sathi - say that the restaurant has been offering Thattil Kutty Dosa for the past two and a half years. The dosa recipe was also given by their cooking guru Ajayakumar. Kudumbasree and Catering Consortium district chairperson Aleemu Usman is always at hand to guide the team.
"Last year, we attended food melas at Thiruvananthapuram and a few other districts. We presented Thattil Kutty Dosa then. We think the Salt n Pepper team got the recipe from there," says Aleemu.
The dosa, priced at Rs 25, is served with tapioca puzhukku, chatni, sambar and chammanthi. The dosa is small in size and thicker than ordinary dosas and the chatni ingredients are different; so is the side dish (tapioca puzhukku).
Says Geetha, "There is rush for the dosa during evening and morning. Especially after the release of the movie, it has become more popular and people come here just to eat that. Government officers and students are the loyal fans of the dosa. And many of them take parcels of the dosa for their family."
The restaurant operates from 7am to 7.30pm. Apart from Thattil Kutty Dosa, the other special dosas on its menu are: Onion roast, onion oothapam, rava dosa, egg dosa, kappa dosa and Chettinadan dosa.

How about trying to make the popular dosa on your own? Well, for starters, here are the ingredients:
Dosa: Rice powder, urad dal, fenugreek, gram flour
Tapioca puzhukku: Tapioca, green chilly, turmeric powder, curry leaves, coconut oil and ginger
Chammanthi: Bengal gram, tomato, onion (boiled), ginger, tamarind
Chatni: Coconut, ginger, green chilly, curry leaves
And actually making the mouthwatering dishes?
Dosa: Grind the rice powder, urad dal, fenugreek and gram flour together into a paste. Add salt with little water. Pour it onto a pan. Spread the mix in smaller and thicker shape. Pour ghee and oil on the sides of the dosa. Wait for two minutes and remove from the pan when it's a little crisp to eat.
Tapioca puzhuku: Boil tapioca pieces, green chilly, turmeric powder, curry leaves and ginger. Add salt and coconut oil when it is boiled properly.
Chammanthi: Grind tomato, ginger, Bengal gram, onion and a small piece of tamarind all together. The chammanthi is ready. , just tuck into your own Thattil Kutty Dosa!
