Iris,

Hopefully MG will weigh in on this, as they're the last word, but I
set my Z axis home via the endstop trigger bolt, which is illustrated
here:

See step 9, callout #43. Once you have things where you want them,
adjust this so that the endstop switch is just tripped.

Hope that's clear enough. Again, I'd get MG to weigh in, since my way
could be the wrong way ;)

1) remove G28 from your start codes in your slicer. This will stop the
printer from homing before a print
2) position your nozzle at the appropriate height
3) send G92 Z0 to tell your firmware that Z is now at 0
4) print
