Are you referring to standard ISPF Editor commands like SAVE, REPL, FIND, CHANGE? You can find the complete list in the zOS ISPF guide at the IBM website.
About the !jck
They aren't shortcuts, but are rather commands. These commands are defined in the ISPF command table. When you type !jck/!jem/!jcl on the command-line, it invokes a JCL scanner program, installed at your site.
However, there are many vendors that offer a JCL Scanner product, and not just one. Say you want to SORT records. IBM's sorting product is DFSORT, whilst Computer Associate(CA)'s sorting solution is called SYNCSORT.
My point is, every mainframe shop has a different set of software products installed. One shop may use DFSORT for sorting, CA-7 for job-scheduling, File-Aid Db2 as the Db2 Table-editor, whereas another shop may use SYNCSORT for sorting, Tivoli/OPC for job-scheduling and Platinum as the Db2 Table-Editor. The system programmers at each mainframe shop define their own set of commands.
You can view the commands, that are in-use at your shop by viewing the Commands Table using ISPF Menu Option 3.9. See below. For example, when you type the command SAREA, it invokes the program ISPSAM in a pop-up window.
