I have a field of type 'phone' setup, and when I subscribe someone and
pass in '1235551234' as the phone number, then MailChimp's website
displays the phone number as '(1235551234) - -'. I also read in the
documentation "If your account has the US Phone numbers option set".
Where in MailChimp can I find this option?

You do it here:

http://kb.mailchimp.com/article/how-do-i-create-my-signup-form

Here's the advice for using various field types, including the phone
type:

http://kb.mailchimp.com/article/youve-got-a-brand-new-signup-form-ive-got-a-brand-new-key

But it sounds/looks like the problem is that you didn't read the full
description in the listSubscribe docs:

http://apidocs.mailchimp.com/rtfm/listsubscribe.func.php

Which says:
"If your account has the US Phone numbers option set, this must be in
the form of NPA-NXX-LINE (404-555-1212). If not, we assume an
International number and will simply set the field with what ever
number is passed in."

Oh I see.

So the "phone" type field can only be used for US phone numbers.

If you use international numbers at all, then you are suppose to just
use a text field.

No, that's not true, though no formatting is done if you set the phone
field to be of type "international", so it is essentially a text
field.
