Is there a way to see the data sent to the API in the api-call log on
mailchimp? I think such a feature would be immensely useful for
debugging API calls.

The only thing we make available is this:
http://www.mailchimp.com/api/faq/#faq3

We don't actually log the full payload passed back and forth with each
call made, so that data's not even available to us on a standard
basis.

What do you think about at least logging the last 10 or so payloads?

I don't see that happening unless there are a flood of requests. If
you really need to see that, I'd suggest either hacking your wrapper
to dump that somewhere when it makes the call or setup something to
sniff your own network traffic to capture that.
