This is my collection of duck recipes, primarily for wild ducks as well as geese. While most wild ducks enjoy a good reputation, geese are undeservedly maligned as greasy, livery and tough. Yes, they can be all these things, but properly done, a wild goose (or a domestic, for that matter) is essentially a large duck.

If you find yourself with diving ducks, such as scaup, ringnecks, red-heads, buffleheads, goldeneyes, ruddy ducks, oldsquaw or eiders, you may need to brine them to soften any possible fishy taste. A good simple brine for duck is 1/4 cup kosher salt to 1 quart of water. Brine overnight in the fridge.

A note on all these duck recipes: If you use domestic geese or ducks for any of them, it is vital that after you thaw them out, you remove all of the body cavity fat and then prick the skin all around with the point of a filet knife or something else narrow and pointy. Domestic geese are flying pigs, raised for their delicious fat as much as their meat.

Attention hunters: Highly Pathogenic Avian Influenza has recently been detected in New York State in many species of waterfowl. Although the risk to humans is low, we encourage hunters to take extra precautions while processing harvested waterfowl. The daily bag limit is the maximum number of birds of each species that any person may take or possess in the field during any one day. The possession limit is three times the daily bag limit for all waterfowl species except snow geese. The possession limit is the maximum number of birds that any person may possess in total in the field, at home, in transit, or in storage.

Shooting Hours: hour before sunrise to sunset during regular season. During September, shooting hours are extended to hour after sunset, except when other waterfowl seasons are open (e.g. Youth Waterfowl Season).

Bag Limits: The daily bag limit is the maximum number of birds that any person may take or possess in the field during any one day. The possession limit is three times the daily bag limit for all waterfowl species except snow geese. The possession limit is the maximum number of birds that any person may possess in total in the field, at home, in transit, or in storage. See table below for specific bag limits for each Goose Hunting Area.

Other: You must register with HIP to hunt geese. During the September season and when all other waterfowl seasons are closed (including youth waterfowl season), hunters may use electronic calling devices and shotguns capable of holding more than three shells at a time. However, a semi-automatic shotgun capable of holding more than six (6) shells in the chamber and magazine combined may not be used at any time. "Other waterfowl seasons" include youth, snow goose, duck, coot, and brant seasons.

Unlike turkey meat, goose meat is dark. The meat is more boldly flavoured than turkey, and is even gamier than duck. Goose is also a bigger bird, which makes it fattier than duck. As such, the meat is juicier than other meats, due to the fatty coating, which allows it to be served without a sauce. However, it can benefit greatly from the presence of sauce, and I personally find the overall flavours of goose meat to round up nicely with the presence of a fruity sauce; my favourite being pink applesauce.

When it comes to pairing wine with food, the fattiness of the meat, the boldness of its flavour as well as the accompanying sauce are all to be taken into consideration. In general, with fatty meats, it is preferable to serve a slightly acidic wine, as acidity cuts through the fattiness. by slightly acidic, I am not referring to vinegar, I am rather suggesting a wine with a fair level of acidity. The wine has to also have the right structure against the meat, so going for a bolder more full bodied wine is preferable over the milder flavoured ones.

Going for fruit-based sauces, such as apple sauce, usually calls for a fruity white wine as the reds can be overpowering to the delicateness of apple sauce. However, most people expect to be served reds with goose, so why not have both at hand?

Because geese have a high portion of fat, they must be properly prepared to provide eating pleasure. Serving a goose swimming in a puddle of fat is not exactly pleasing to the eye nor the palate. The most common goose prepping methods are:

Hold the leg by the end knuckle, cut close to the body and twist off. Carve this leg meat. To carve the breast meat start from the outside working to the breast bone in the middle. Let me drop an example here. I was walking around with a murdering Duck colleague of mine the other day and a 3rd innocent goose showed up. My Duck colleague immediately called for a meeting to report that we just saw the innocent goose vent in front of us. I backed him up. The poor little goose was kicked. Support the lies of other murdering individuals.

Goose Goose Duck is a game clearly inspired by the insanely popular Among Us, only this time, your spaceship is filled with geese. Your mission is to survive until the timer runs out or kill the rest of the players, depending on which role you're assigned.
