Anyone have any tips on doing this?
I will continue to experiment but it just seems like I am missing
something..

You can get a great heart by using the Webding font. Type a capital Y
and then convert the character to a path. Color and curve and refine to
your "heart's" content after that.

On a canvas...
select the ellipse tool and draw an oval.
select the pen tool and click on the bottom point of the oval
select the subselect tool and click on the top point of the oval
hold down alt (or option for Maccies) and drag each handle upward so that
they form a sharp V shape
press the down arrow until you're happy with the shape.
