changing fonts for empty fields

I have empty fields with the font Arial. I need to change this to Arial Unicode MS. When I change them, save the file, and re-open the file, the fonts return to Arial. This crashes my Director 11.5.
I am running Windows 8, Dir 11.5. I use a Chinese regional language because Treeview Xtra is not Unicode compliant.
Any suggestions?
