RECIPES:
PARTY BROCCOLI - 6 Servings

2 Tbsps butter
2 Tbsps minced onion
1 1/2 cup sour cream or plain yogurt
2 tsps sugar
1 tsp white vinegar
1/2 tsp poppy seeds or chia seeds
1/2 tsp paprika
1/4 tsp salt
Dash of cayenne pepper
2 packages frozen broccoli, cooked just until tender and drained
1/3 cup chopped cashews
In a small saucepan melt butter; saute onion. Remove from heat and stir in sour cream/yogurt, sugar, vinegar, poppy/chia seeds, paprika, salt, and cayenne pepper. Arrange broccoli on heated platter and pour sour cream sauce over it. Sprinkle on cashews. Serve right away.

FIESTA RIB EYE STEAKS
Recipe from www.NancysKitchen.com/
4 ribeye steaks, cut 3/4 inch thick
2 tablespoons fresh lime juice
8 flour tortillas, 6 inch size
1/4 cup colby cheese, shredded
1/4 cup jack cheese, shredded
1 cup salsa
Place steaks in utility dish and sprinkle with half the lime juice. Turn steaks over and sprinkle with the remaining juice. Wrap tortillas securely in heavy duty aluminum foil. Place steaks on grid over medium coals. Grill steaks 7 to 9 minutes for rare to medium, turning once. Place tortilla packet on outer edge of grid and heat 5 minutes, turning once. Top each steak with an equal amount of the cheeses. Serve with salsa and the tortillas.
