Hello,
While I am aware that I can download all available subtitles, I would like to target and download subtitles in only a specific language so it does not download them all.
For example, download the Spanish subs using the language code "es"
I would be using the writeautomaticsubs = False option as I only want captions that were uploaded and not autogenerated. Any help is appreciated :)

Crunchyroll does not offer Japanese subtitles as it does not have any licensing for release in Japan, so here's a quick tip for anyone who wants to watch anime via crunchyroll but with Japanese subtitles. I'm not sure whether this works on Chrome, but it definitely works on Firefox.
Video subtitles are useful for displaying dialogue and sounds as on-screen text for people who are hard-of-hearing or for language translation. If you're using YouTube, you can easily upload an existing subtitle file (usually in the SRT format) or type your own subtitles by hand. If you want to add subtitles to a video file on your computer, you can create an SRT file and add it to your video with HandBrake. This wikiHow teaches you how to add subtitles to a YouTube video, as well as a video on your PC or Mac.
Step 2: Click the button of "Choose Other Profile" to convert your DVD to MP4 or other digital formats. If you only want the subtitles output, click "Subtitle" > "SRT". Then DVDFab will help you extract only the subtitles from DVD to SRT files.
Ripping DVDs with desired inner subtitles means extracting the DVD content (usually movies or TV shows) while including the subtitles embedded within the DVD. This way, the downloaded digital video file would include the subtitles provided in the original DVD. DVDFab DVD Ripping software lets you preserve all the inner subtitles or select subtitles you want to retain.
