Mapping midi parameters in Logic.

Hi all.
How do we map midi parameters in Logic? Also, how do we tell what parameters a device is sending? I've got an Artiphon Chorda. I'm pretty sure it sends something for touching a pad, possibly sliding along it in different directions, and pressure, it can do MPE. So I have no idea how to tell what those parameters are sent or received as.
Once I find that out, how do you do mapping? Specifically, I saw this video.
