Sebastien, first of all we do not recommend using pip as an installation method unless you are comfortable with debugging installation issues

Note that this is intended for development use only, and if you aren’t comfortable debugging package installation, this is not for you.

have a look at the documentation and follow one of the recommended installation methods https://plaso.readthedocs.io/en/latest/sources/user/Users-Guide.html#installing-the-packaged-release
