idea for farmer's market sprouts and mushrooms

The Santa Fe Farmer's Market has a few items that I think would sell
here as well.

Sunflower sprouts - the sprout lady always has a line at her booth.
She cuts them fresh or sells them by the tray (deposit on reusable
tray). Her sprouts are always clean and straight. They are grown in
soil, on an indoor rack, in front of a sliding glass door. She does
pea shoots and buckwheat, too. She often sells out.

Fresh mushrooms - the mushroom guy grows these is his garage. Bags are
stuffed with sawdust, inoculated with mushroom spores, and grown in
the dark. He sells a $3 bag, a $5 bag, and full logs so you can grow
your own. He grow oyster mushrooms and lion's mane varieties.

For someone looking for a weekend business, either or both of these
could be profitable. Both are indoor growing operations.

The third thing is goat milk cheese and yogurt, but that is a much
larger undertaking.
