Okay, granted I am a southerner by birth and upbringing, and we like
our pork. Even though it's not Smithfield hams,
this guy raises a mean pig. Does any of this translate here?

Cindy,
Joel Salatin's is probably the --biggest--eco-friendly, humane,
pasture-based farmer you will find. The restaurant is purchasing
"local" meat which is not raised in an "industrialized fashion".
Other than the "industrialized slaughter" the govt requires to sell
publicly, you probably won't find much better meat sold on a large
scale.
