In yet another deep dive into Google Scholar I managed to squeeze out a few more Interlisp papers, which wasn't easy as they contain few mentions of Interlisp or are not searchable. What they have in common is they report on research applications of Interlisp.

An intelligent simulation model generator (PDF). A project carried out at the Polytechnic of Milan, Italy, and supported by a Rank Xerox grant. The institutions and the time frame match the Interlisp-D workstations whose delivery Roberto Ghislanzoni oversaw.

Un ambiente per il Progetto e la simulazione di modelli complessi (an environment for the design and simulation of complex models). A longer paper in Italian on the above project by the same authors, with a few more good screenshots.

A Fuzzy Logic Programming Environment for Real-Time Control.

An Intelligent Tutoring System for Exploring Principles of Economics (PDF). The paper doesn't explicitly mention it but the gauges in the screenshots and the project description hint the system was written with LOOPS.
