Hi,

I'm looking into using different yeast species in the fermentation of kombucha. I was wondering if anyone out there had any tips on how this would be best be done. I'm particularly interested in using Torulaspora delbrueckii, which, in theory, would produce less alcohol in the second fermentation.

Any advice?
