I am wondering if using hydrogen peroxide for rinsing for sanitation would work.

I am not completely sure but it sounds like people successfully use it for sanitizing for beer so I would think it would work with Kombucha. Definitely star san is preferred but I believe H2O2 would work in a pinch.
