Common question: In what proportions do you mix herbs to make herbal
Kombucha?
Answer: We haven't delved too much into the area of herbal Kombucha.
It will be our next big venture. As a mathematician, I'll start by
balancing the two pieces of advice I've been given: 1.) Use 1-part
green tea, 2-parts herbs, and 2.) You usually use up to 6 times as
much herbs (by weight) as the tea you are replacing.

I will definitely keep the SCOBYs used in our herbal Kombucha seperate
from each other so as not to cross-contaminate the flavors. I will
start an 'Herbal Kombucha' discussion when our experiment begins (when
we get back from vacation later in December).

What is the maximum alcohol tolerance for a SCOBY?  I'm in a commercial setting where they are trying to make kombucha beer, and there are concerns about keeping a living culture in the product.  My understanding is a SCOBY has a hard time surviving in over 3.5% abv.

I have not tested this but it seems like it would be easy to do.  Make small batches and add alcohol in measured concentrations, see at what point the SCOBY stops growing. 
3.5% sounds about right to me.
