Flavoring kombucha with ginger

Hello,

What is the best way to achieve a strong ginger flavor in kombucha?
Also, I purchased dried ginger from Jasmine Pearl Tea Co., would this be placed in the initial fermentation with the SCOBY or in the second bottle fermentation?

You need to use ginger only in the post-fermentation.  Using ginger tea will just slow down the growth of the cultures. 

Try soaking your grated up ginger in kombucha (refrigerated) for a few weeks, then strain out the ginger.

Flavor from juice in general does not last as long.  I use only fresh ginger but yeah sure you could use ginger juice and it would add some benefits, but the fresher the better.  Juice is pasturized and it will show in the final flavor.  Also juice flavors don't last as long and deteriorate faster.

I'm wondering about the same thing. Fresh ginger (boiled pieces) or juice is acting as a clarification agent. It creates a big sediment layer at the botom of the bottle. Anyone know how to fix this?

Whenever you end up with a sediment layer you can remove it by siphoning off into a secondary container.  This is a trick from beer homebrewing that works fine for Kombucha.  Siphoning can remove a good deal of yeast but not the bacteria.  There will still be all the beneficial bacteria and enough active yeast to carry on the live culture. 

Our stainless tanks allow us to avoid the very top and very bottom of the batch, so when we pump into the bright tank there is very little sediment.  Then when we bottle we drain the sediment out of the drain at the bottom of the tank.  Our Kombucha is clear if it is kept in the fridge.  If it is out of the fridge for more than 2 hour it starts to build up a lot of sediment.  Even though they are mostly clear when you buy them, our bottles can be used to quickly start a batch of Kombucha.  For this, Hero's Blend works the best because it has no added ginger or fruit ingredients.
