reduced configuration options in RH9

I just upgraded from RH7.3 to RH9 but noticed than many configuration
options, particularly for the GNOME panel and for sawfish (which I
prefer to metacity) are missing from the Preferences menus. Are these
accessible via another interface (or even by hand-editing
configuration files)?
