Is there a Linked Art (or CIDOC CRM) property I can use to indicate that a certain Exhibition Activity instantiates (as it were - maybe 'implements' is a better verb) a particular Exhibition Concept?

I don't know if I understand you properly but maybe you can use the Dublin Core property "dc:subject" in such a case: an <Exhibition activity> <dc:subject> <concept>.

Thanks, but I am hoping to find a property that is within the CIDOC CRM framework, specifically with Domain/Range of Activity/PropositionalObject.

Thanks: yes, I see it now.
As you may recall from previous discussions, one issue we have (which I imagine others have as well) is that each of our source records needs to generate a single Linked Art resource. In the case of exhibitions, there is a single record about each exhibition which contains a set of venues+dates/places. Therefore we will have to model the exhibition as an Abstract Work, and use the inverse influenced property to bring in the various Acitivities which instantiate it.
