Use supermarket cookbooks with Chef 11?

Recently, it doesn't seem possible to apply any Chef Supermarket cookbook to a Chef version 11 system anymore. Are the two now incompatible? Is there a workaround?

A cookbook's metadata.rb can now include a chef_version attribute.  For example the chef_nginx cookbook states that it requires Chef 12.1 or later.

You may need to grab an older version of the cookbook from the Supermarket for it work in your environment.

It would be helpful if you gave a specific example of a cookbook and the error messages you are seeing.
