Here is the electronic copy of what I completed at this time for Financial Algebra. Stage 1 and 2a (performance task) are complete and are located on pages 3-7. You can use the performance task as an example.

Looks like I was completely off on what stage 2 & 3 looks like based on this sample for the Financial Algebra Course.
I guess the resources in Inside Mathematics may come in more handy after stage 2 & 3 (but I wouldn't be surprised if I am completely off again).

But If you still want to check out some resources on how some of these extended tasks look like based on the CC standards, I think this is still a good resource to pull problems and projects from. I especially like their Problem of the Month activities that break down the levels from A to E for the various levels from Kinder to High school (I was thinking maybe we can incorporate our own P.O.M. or Problem of the Module as an alternative or supplement to the end of module assessment to accommodate more of our student's diverse learning styles):
