Megan,
If you press the button with the three dots '...' that is next to the entry field for the directory then a browse window opens where you can select a directory.
That said ... usually it is not necessary to merge LAS or LAZ files explicitely into a file on disk with lasmerge as you can always merge on-the-fly with the '-merged' option and save one processing step as well as a lot of IO and disk space ...
