Hi All  -  Spring is here!   Have lots of fresh brats, burgers, flavored burgers, and tons of steaks/chops on hand.  You know, this past Easter - I was privileged to have dinner at a friend's home.  She served as an appetizer - Rack-of-lamb.  ROL has 8 rib bones - she made 8 little chop out of the rack and then put them on the Barbie.  Once done - s/p and serve.  I like to just pick them up and eat them holding on to the rib bone.  Fabulous!     You should try this - not only is this delicious it is also very impressive served!

Business has been over whelming - I believe it is due to lower fuel prices.  I am looking for an experienced part time butcher and counter help.  Known of anyone - send them my way.

On a different note - you may have heard that Chef Matt was in a bike accident.  He has - or had - or still does - I don't know, a big bump on his forehead.  Anyway - I called him for some advice this AM and he said he will be back to work this PM.  I am so glad to see him return!!!!  You do not realize how important he is - until he is not there!  Matt is my go to person.  I know I can be a bear sometimes and do not compliment my staff as I should.  I  am going to change that.  And, that goes to all of my staff - Chris, Matt #2, Liv, Tori, Max, and Cohner, and Sally.

Hi All  -  Recently I had the opportunity to have dinner at an Italian restaurant.  Located in Indianapolis.  Place is called "Mama Corrona's - or something like that.  What I wanted to says about this place - is their bread.  I could be perfectly content to sit at the bar, drink my martini, and just fill up on there bread with lots of real butter. I wish I could partner with them and market their bread!    Any way - what a good restaurant.  I highly recommend it.

This passed Tue. I picked a pallet of Sechler Pickles, jams, and hot mustards.  For all you folks who have been asking for there stuff - I will have it out on the shelf this Sat.  I sure love there candied pickles.  I also have picked up some new item from them too. 

Same with Red Gold.  I have a bunch of there products on display too.  Every item that they make for retail.  If you know of any other Indiana product that I could market - let me know.  I was in Oregon years ago  - they have actual stores that market only stuff made in Oregon. 

This weeks specials are:  Chef Matt's aloha & spinach swiss brats.  K-bobs  - chix. or beef.  I know it is spring - chuck roast, and smoked chops.  A word about my smoked chops.  They are the best!  Made in In. and fully cooked.  If you are tired of steak, chop, or burgers on the Barbie - try my smoked chops.  Just pan fry on high for 3 min. each side and they are ready.  I think smoked chops are more tender than fresh chops.  Don't ask me why - I do not have a clue.  I just know they are fabulous!  Trust your butcher!

Guess me being a senior citizen I have a hard time with IT.  My web site says my hours are:  10 to 6 daily & Sun - 11 to  5.  However - Google says 10 to 7 - and I can not change that.  HOURS ARE - 10 to 6 daily and Sun - 11 to 5.  Hope that clears this mess up.   Think my voice mail says the same thing - and Chris will fix that today.   Thank God for my staff - or I could not function around here.  FYI - Matt is doing well and I am so glad to have him back.  Funny how you do not appreciate some one till they are gone.   Also, you will notice a change in personnel.  Cohner & Max are going home for summer. Olivia is graduating and Tori is only here half the time due to - things.  So I will be hiring a new group soon.  I did hire Matt#2 - and he is showing success.
