Today I have been busy making different size turkey breasts. Just call or stop in and I will bone one out for you. Usual rule-of-thumb - 20lb. bird will yield 10lb. breast.
Something new this year - Chef Matt is brining turkeys. Think he has 2 or 3 different brines to choice from.
Only have a few more ducks left - so if you want to try your hand cooking a duck - call your order in. I have gooses, Capone, Cornish hens, and beautiful roasting hens in stock.
Course I have tons of cooked and raw shrimp, king crab legs, and even something new - shrimp rings.
I just made 1/2 dozens pork roasts. I filleted out a pork loin roast - then stuff it with spinach, feta cheese, and cranberries. Fabulous stuff. Only $5.99lb.
Chef Matt is busy making a new type of cheese ball. I told him I wanted a fire cracker hot one. I can not wait to taste his creation! Marissa is also making deviled eggs. The list goes on and on!
