Piece Pizza, Bayless, and PAWS Chicago are teaming up for a benefit to raise money to help animals in need, and increase dog and cat adoptions, focusing on dogs that have been in the PAWS shelter long-term.


"Piece approached us, and they came to us with this idea of promoting long-term animals, and then also a giveback to PAWS with every one of these specialty pizzas ordered," said PAWS Chicago CEO Susanna Wickham.


The team at Piece Pizza had been supporters of PAWS Chicago's work for some time before proposing the fundraiser, and saw an opportunity to use their kitchen as a way to advocate for the city's animals, catching the attention of cat-lover and celebrity chef Rick Bayless.


"When they got this idea to do this particular fundraiser here at Piece Pizza, I thought, 'Man, I'm in, because I have something that I can offer that's a unique creation, but also it goes for a really good cause,'" Bayless said.


To support PAWS, the Bayless Family Pizza recipe will be a guest star on the Piece Pizza menu through April 9, with $10 from every pie sold going to PAWS, and on every pizza box going out the door there's a sticker featuring a different long-term shelter dog ready to be adopted.


"If we can have a good first quarter, that makes a big difference in us being able to predict how many animals we can take in, what level of service we can give," Wickham said. "We are 100% funded by donations. So we really need the attention all year long because we are saving pets day in, day out, seven days a week."


"This is a family recipe that we've developed over like 30 years, and it started off as a grilled pizza, went to a big pizza, and now it's at Piece pizza," he said. "The cool thing about this really has to do with the fact that this pizza really does reflect a lot of what I'm known for, but does it in a pizza way.


The collaboration pizza for February will be a collaboration with Matthias Merges of Billy Sunday, McDonald said. The vegetarian white pizza with roasted garlic, rosemary, extra virgin olive oil and pecorino sardo will be followed by another specialty pizza collaboration for March that is still being developed, she said.

Now, there is a new challenger in the pizza arena: Home Slice Pizza, located about 10 minutes north of Rice campus. Originally founded in 2005, Home Slice has received critical acclaim for its parlors in Austin, and last month, the franchise opened up a location in Houston, bringing authentic NY-style pizza to H-town.


In our unending quest for the Truth, we got in touch with Stewart this morning to ask him ourselves. As he waited for a flight to a secret location, Stewart did his best to explain to Daily Intelligencer how he had managed to avoid a slice of pizza for so long, why he finally ate one yesterday (he was hung-over), and what he plans to eat next.


Hey, Timothy Malcolm here. For this week, I'm turning over the story to Joanna O'Leary, who's a relative newbie to New York pizza indulgence. Spoiler: She really likes Frank's. I'll give my slice grade after her story. Take it away, Joanna:


Learn how to use an air fryer to reheat pizza to crispy perfection. Say goodbye to soggy leftovers and enjoy pizza that tastes just like new with these pro tips and common mistakes to avoid!


Leftovers of thick crust pizza, like Chicago-style or pan pizza, requires a little more finesse. You want the middle to be hot and the cheese to be melted without burning that wonderful, doughy crust.


Tip: If you find that the crust is heating too quickly compared to the middle, you can use a small piece of aluminum foil to lightly cover the top of the pizza for the remaining cooking time.


Pro Tip: Oven-style air fryers often come with multiple racks. If reheating more than a couple of slices, you can use multiple trays, but be sure to swap their positions halfway through the cooking time for even reheating.


Reheating at too high a temperature can scorch your pizza, while too low a temperature may leave it under-heated and soggy. 350F is a good starting point, but see in post above for details on thick vs. thin crust pizza.


Different types of pizza require different reheating times. Thin crust might only need 3 minutes, while a deep-dish slice might need up to 7 minutes. Adjust your temperature and timing based on the pizza you have.


To reheat pizza in an air fryer, preheat your air fryer to 350F. Place the leftover pizza slices in the air fryer basket in a single layer, and air fry for about 3-5 minutes or until heated through and crispy. See above for the 4 common mistakes to avoid.


Reheating pizza in a vortex air fryer is similar to other air fryers. Preheat to 350F and air fry for 3-5 minutes. The vortex air fryer may cook faster due to its technology, so check after 3 minutes.


Q: What is your bake temp for the round and square pies? Are they the same?

A: Rounds currently bake at 575 F and squares bake at 550 F. That might change with the shift from gas to electric ovens. Rounds take 8-9 minutes to bake, squares take 15-20 minutes.


Q: Why are you switching from gas to electric ovens?

A: When the shop is busy, you need to pump out pizzas fast. As a pizza bakes, the floor of the oven cools down. The more pizza you bake, the more the oven temperature drops. When that happens, there are two things you can do and neither are optimal. You can put more pizza right into the cold oven, which gets you a nice top but an undercooked bottom. Or you can wait for the oven to recover, which leads to even LONGER wait times.
