What is the difference between creating my own stack using https://github.com/elasticRTC/elasticrtc-tools Vs. creating an instance from the marketplace https://aws.amazon.com/marketplace/pp/B01HD8W9CS/ where it adds software costs to the price of EC2 instance?

With elasticrtc-tools you have more flexibility because you are not limited to 1 AMI (e.g. you can launch the professional-SFU room application). Otherwise, there are no other differences and both charge the end-user through the AWS Marketplace.
