Aloo chaat is a popular and super tasty street food snack made with crispy fried potato cubes. They are mixed and tossed with spicy and sweet chutneys, ground spice powders and lemon juice. Later finished with a topping of curd, mint leaves, coriander leaves, pomegranate arils and sev.
There are many ways of making this easy potato snack. My aloo chat recipe is a tasty addictive vegan and gluten-free snack bound to have you coming back for more. This one of the easiest chaat recipes that you will ever make.
The great thing about aloo chat is that it can be made to your taste! Delhi-style aloo chaat is very popular, but I am sharing a simpler recipe. This easy recipe makes a tangy, sweet, chatpata chaat and the recipe can also be halved, doubled or tripled.
However tamarind chutney can be skipped and you can still enjoy this potato chaat with a mix of the various ground spices and lemon juice. It can be served as an evening snack or as a starter snack before meals.
While we are at this aloo chat recipe, let me tell you that there is one more chaat snack made with Aloo Tikki or crispy potato patties. I have earlier posted this differently made Aloo Tikki Chaat recipe.
You can also air-fry the potatoes instead of frying and follow the rest of the recipe. I have tried this air-frying method and the potatoes tasted just as delicious and they were a bit lighter compared to fried aloo chat.
i have posted several other chaat recipes till, but i have to admit that alu chaat recipes is the most simple yet tasty recipe. traditionally aloo chaat recipes are prepared by deep frying the potato to wedges. however i have shallow fried the boiled potato cubes which makes it less oily and more healthier. perhaps boiling the potatoes and shallow frying may introduce an extra step, but certainly more healthier and cleaner as compared to just deep frying. having said that deep frying is more dearer to taste.
as compared to any other indian chaat recipes, even aloo chaat recipe is open ended. there are several variations to this fast food snack which changes with each regions. while, some prefer to keep it simple without adding onions or sev, but i personally like the combination of all toppings. if you prefer you can skip adding curd, onions and fine sev with just spice powders like chaat masala and chilli powder. also if you are vegan than add few drops of lemon juice which would help to introduce sour taste to it.

For a home version the potatoes can be shallow fried, baked in an oven or even air fried. I prefer a healthy aloo chaat so I have parboiled the potatoes and fried them in a pan. In this post I share 3 ways to prepare or fry the potatoes for the chaat.
Various spices like chaat masala, red chilli powder and roasted cumin powder are used for the flavor and heat. Usually green chutney and sweet tamarind chutney both are used in the street style aloo chaat. But it is up to you to use them or simply skip or use fine chopped coriander leaves and lemon juice for the flavor and tang.
Sev is crisp fried gram flour vermicelli snack that is used for garnishing various chaats. These are easily available in the Indian stores. If you do not have crunchy sev you can simply roast some papads, crush them and use. Other substitutes are crushed papdis, cornflakes, tortilla chips, baked potato chips or poha chivda.
Transfer to a serving plate. Sprinkle some coriander leaves, generous amount of nylon sev and pomegranate seeds. You can replace pomegranate seeds with some sweet raisins and roasted cashews. Serve aloo chaat immediately.

Spices & herb: I have used the most common spices that we use in chaat for this recipe like chaat masala, cumin powder, kala namak. Fresh cilantro and mint add freshness to the chaat.

Whenever I miss home, I make a home version using whatever kind of potatoes I have at hand. Sometimes I make the traditional way - using regular potatoes, but as you can tell from different pictures, I have made it with sweet potatoes, yellow potatoes, red potatoes, purple potatoes, you name it ? If the potatoes are fried in the right way and the seasoning is perfect, really you can use any kind of potatoes in this delhi style aloo chaat.

You will find a good selection on this blog and they can be enjoyed on their own or together. I like to make four or five when we have friends over. They always go down well.
