There needs to be a back button to get me back to the title page once
I hit the "play!" button from the title screen.

There is no way to get back without hitting 7 buttons to get through a
game I might not want to play. I might want to go back to see the
games overview. or possibly a high scores screen :-). Or just want to
quit the game I'm playing in.

Since there is no double tap to bring up a menu or anything.

Other wise I have to go through this process.

(upper right hand corner) hit "play", hit "done", hit "go", hit "play"
again, hit "done", hit "go", hit "finish". All just to get back to the
title screen.
Since not even hitting the iPhone's home button and re-entering the
app doesn't even get me back to the title screen (which I know is good
for saving games being played and interrupting phone calls and such).
Once I enter a new game, I'm completely stuck in it, without the 7
button process though.

A bit of a tedious process that I'm sure people are going to run into.
And complain about.

Yeah, I do it constantly while testing the game. The issue is where to
stick this particular button. We don't have a lot of screen space
available in phase 2. A double tap to a game menu is interesting. We
would just need some intutive way for the user to know that.

A good place to say this "double tap" advice is in the "help" screen.
Since it comes up when the player first starts the game. And you have
plenty of space down below the "each hint used" text on the help
screen.

That's true. In our internal testing people didn't actually read the
help.

Also, most other games that support this have "double tap for menu"
somewhere on the screen. That's probably the easiest thing.
